There is a new type of nonstick coating called ceramic-titanium that is being used on Scanpan cookware. It is made by combining titanium and ceramic, and heating them to a very high temperature (30,000 degrees). This causes the atoms to break down into charged particles, called plasma. The plasma is then shot at the surface of an aluminum pan at a very fast speed. The coating attaches itself to the metal, creating a very hard and scratch-resistant surface.
